Food fibres for frozen food
With frozen foods such as frozen pizza, microwave meals and convenience food, JELUCEL® food fibres reduce the formation of ice crystals, shorten the time needed for freezing and thawing and diminish the exudation of ingredients. In addition, depending on the end product, further functional properties take effect:
- Freezing and thawing stability is improved
- Dough volume and dough yield are improved
- Moisture dispersant effect is improved
- Uniform heating of product because of homogenous moisture distribution
- Fibre content is increased
The individual applications must comply with the food regulations of the respective country in which the end products are marketed, and must in particular cases be evaluated by experts.
